If Yeshua wanted to establish a celibate priesthood, why did he choose married men as his Apostles?

The celibacy rule for parish priests was adopted long after the death of the twelve apostles and was never implemented by the ancient Churches of the East. In the Eastern Orthodox Church, Oriental Orthodoxy and Eastern Catholic Churches have from ancient times both married and celibate clergy. Those who opt for married life must marry before becoming deacons and priests.
